Ragda patties


Inspite of the name, Ragda patties are just aloo tikkis and a peas curry. They are very easy to make, you just need to remember to soak the peas 6 hours in advance.

The recipe calls for a special type of pulse - vatana peas. 
I have used white channa at times. It tastes good too.

It is a chaat and the best part is it can be cooked ahead of time, reheated and assembled before your guests. It tastes excellent and looks gorgeous. 
This can be made 'satwik' by avoiding the onion in the garnish.

The following recipe will make around 15 - 16 patties. 


Ingredients:

For the ragda:
Vatana peas - 1 big cup
Red chilli - 3 , broken
Asafoetida powder -1/2 tsp
Salt
Turmeric powder - 1/2 tsp
Coriander powder - 1/2 tsp heaped
Chilli powder - 1/2 tsp heaped
Jeera powder - 1/2 tsp heaped
Tamarind - 1 small ball
Oil - 2 tbsp

For the potato patties:
Potato - 5 medium
Green chilli - 3 
Ginger - 2 inch
Coriander leaf - 2 tbsp
Lime juice - 1/2 tbsp
Salt
Corn flour - 1 tbsp
(Optional) Sweet corn / boiled green peas / blanched spinach / grated carrot - 1/2 cup

Garnish:
Chopped onion
Chopped coriander
Sev

For the ragda:
Soak 1 big cup of the vatana peas / channa in water for 6 hours.

Preparation of the potato patties:


Boil the potatoes, peel skin.
Pound the ginger and green chillies together.


Grate the potato or mash well.

Add all the above mentioned ingredients and mix well. Add more corn flour if you feel the mixture is too wet. 


As I mentioned, the sweet corn is optional. I just added it for 'the look'!!


Make small balls and flatten them.

Pan fry with little oil till golden brown on both sides.



Preparation of the ragda:

Boil / pressure cook the soaked peas till soft.

Heat the oil and temper with the red chilli and asafoetida.

Add the boiled peas to this.

Next go in the spices.


Extract 1 cup of tamarind pulp from the tamarind and add to the peas.

Mash. Boil for 5 minutes.



Garnish:
Sweet sauce / date tamarind sauce 
Green sauce / coriander mint sauce
Chopped onion
Chopped coriander
Sev


To assemble:
Pour the ragda over the patties.

Top with onions, both the chutneys, sev and coriander leaf.


The onion can be omitted, like my little one wanted!
