Bruschetta


Bread topped with tomato and olive oil.
How can something so simple, taste so good?
Summery, light, fresh.


Ingredients:
Bread - 1 loaf
Tomato - 5 medium
Garlic - 2 pods
Olive oil 
Salt
Pepper
Basil - 1/2 a handful
Balsamic vinegar - 2 tsp
( if you do not have this - mix 1 tbsp vinegar, 2 pinch sugar and 2 drops soya sauce)


Method:
Toast the bread - almost deep fry - in olive oil on a low flame till golden brown. It should be crisp.



Chop the tomato into chunks.
Rustic!!

Add freshly ground pepper.

Salt.

Pounded garlic.

Chopped Basil.

Balsamic vinegar.

Now mix everything and mash everything up.. Preferable with hand. Otherwise masher. You don't want a mush.. 


Top the bread with 2 spoonfuls and enjoy the crunchy sweet tangy mouth full.

Once I had no basil and no balsamic. I was in no mood to mix vinegar with sugar too!!
The end result,was good too!!
