Falooda sev

Yes, that is what is used in falooda. Not semiya!! It is so easy to make and the kudos you get for it is worth the minimal effort.

Cornflour - 1/2 cup
Sugar - 1 tbsp
Water - 1 1/2 cups

Other requirements:
Ice cold water
Sev press
Rose water - 2 tsp (optional)

Mix all the ingredients - corn flour, sugar and 1-1/2 cup of water together so that no lumps remain.

Keep aside for 10 minutes. Then mix again thoroughly and transfer to a non stick vessel to heat.

It will start coagulating almost immediately.

Keep stirring while heating because soon it will become a transparent mass.

While it is still hot use a sev press to make the sev.
Pour the sev into ice cold water. Add the rose water to the cold water , if using.

Store inside the cold water in the fridge till serving time.
Then use in your falooda.
