Basic recipe for many dishes


When I am caught off guard ; there is a standard handy easy recipe I follow which can be used to make a basic flavored dal or rice.
This makes a great pulav and excellent dal.
You will find many things optional in this recipe, that is because it can be changed to suit your requirements. The rice / dal will be a light yellow color as there is no chilly powder or tomato and if you want to increase the yellow color, add more turmeric powder.
The tanginess or zing, if required, can be got by adding lemon juice at the very end.

Basic Ingredients:
Onion - 1 large
Ginger - 1 inch
Garlic - 3 pods
Green chilly - 2 + (depending on your spice level)

Method:
Grind all the above into a fine paste.

Heat 2 tbsp oil / ghee / butter in a heavy bottom vessel and if you want, splutter 1 tsp of either Mustard or jeera or assorted whole spices.
Fry the paste on low flame till the raw smell goes.

Add Salt1 tsp Turmeric powder and 1 tsp Garam Masala.
Fry for 1 minute.

How to proceed:
Now use this base to flavor your cooked rice / dal.
You can add boiled vegetables, fried cashew nuts, fried raisins, fresh grapes, pomegranate seeds, pineapple cubes etc.
Once rice / dal has been mixed with the base and heated through, turn off flame and if you want, add lemon juice to add a zing.

  1. For the daal i add tomatos too while grinding.. But I think this one tastes better :-))
